Cherry Breakfast Muffin

From “Cooking with Cherries From the Prairies”

  • 1 ¼ cups flour
  • ¼ cup wheat germ
  • ½ cup rolled oats
  • ½ cup bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1/3 cup nuts or seeds
  • ¾ cup thawed Everyday Farms frozen cherries, well drained
  • 1 egg
  • 1 cup mashed bananas
  • ½ cup buttermilk
  • 1/3 cup brown sugar
  • ¼ cup oil
  • ½ cup chopped apples

In a large bowl whisk together flour, wheat germ, oats, bran, baking powder, baking soda, seeds and salt. In another bowl beat egg and oil. Add brown sugar and beat. Add banana and buttermilk and beat until blended. Add egg/oil mixture to flour mixture. Add cherries and apples and mix gently until just moistened. Fill paper lined or greased muffin cups ¾ full. Sprinkle with cinnamon and brown sugar. Bake in 375 oven for 18-20 minutes.
